Evolve, in collaboration with BSK Projects, is proud to deliver the fit-out for Pickled Monkey Brewing Co., an iconic brewery set to redefine the hospitality scene in Marrickville.

This hallmark project delivered a vibrant, two-level venue with seating for over 300 guests, catering to craft beer enthusiasts and sports fans alike. The ground floor features a combined brewery and bar, complemented by the “Italian Gringo” kitchen serving pizzas, tacos, and deli-style sandwiches. The upper level offers a multifunctional space with a full pub menu and a low-and-slow smoker in the main kitchen, delivering a unique and diverse dining experience.
